It all depends. Are you using a control panel like cPanel or Plesk, or doing this via SSH? Does your host offer backup capabilities? What type of server are you running, windows or linux?

I think the best idea would be to contact your host.

I'm using CPanel but for some reason I keep getting a timed out from it. Also what I mean by server back up is can I back up clients websites through my own server and if so whats it like to do...?

If its timing out you need to speak to your host. There are lots of ways to backup websites and all depends on how you want to backup. A local copy on the server, over FTP, SFTP, SSH, to another server?
